Starts with curd
The Bilona method sets milk into curd first, then churns that curd. Cream-based production skips this and clarifies cream directly.
The Process
Six steps, in the order they have always been done. Nothing here is a shortcut, and nothing about it is complicated — it simply takes longer.
Step 01 of 06
Fresh milk is collected for preparation.
Preparation begins with fresh milk, brought to the right temperature for setting into curd. Nothing is added at this stage beyond what is needed to set it.
What Makes It Different
Three things distinguish the Bilona method from faster production routes.
The Bilona method sets milk into curd first, then churns that curd. Cream-based production skips this and clarifies cream directly.
Butter is gathered by churning rather than by mechanical separation, which is slower and takes more milk per litre of finished ghee.
The butter is brought to ghee gradually, so the milk solids settle and colour gently. This stage is where the aroma comes from.
We describe our preparation process and our ingredients. We do not make medical, nutritional or therapeutic claims about ghee, and we do not compare our product to others on those grounds.
The Result
Every LACMORA jar is prepared this way. What changes is the milk it starts from.
